Baked oatmeal on a snowy day...

I woke up this morning craving oatmeal, so I decided to make baked oatmeal and share the recipe with you! It's really easy, and the best part is that you can customize it to suit your taste. Just add fruits, nuts, berries, or whatever else you may like.

I like my baked oatmeal to be more like granola, so I added dried cranberries, dried blueberries, golden raisins, sliced almonds, chopped walnuts, and some ground flaxseed. I also omitted the butter.

Baked Oatmeal
2 c. oatmeal (I use Quaker old-fashioned)
1/4 tsp. salt
1/4 c. butter (you can omit this for lower fat content & a chewier oatmeal)
1 beaten egg 
1/2 c. brown sugar
3/4 c. milk (I like to use almond milk)
1 TBSP. baking powder
1 tsp. cinnamon (optional)

Mix ingredients well. Pour into greased pan/dish (I use an 8X8 pan). Bake at 350 degrees for 30 minutes or until set. Cut into bars - may be served in bowls with warm milk, if desired.
